L'Escudella

L'Escudella is, aptly enough, "plate" in Occitan! Paul-Arthur Berlan, the young chef, has worked in some prestigious establishments (Michel Sarran, Yannick Alléno). Here, he marries produce from the terroir of the Greater Paris area with the flavours of Languedoc.
